Recipe: Korea Pale Ale II


Brew Location: Cambridge, MA. Boomer Dome.

Adapted from the Hophead IPA Recipe at the Modern Homebrew Emporium.

Brought 2.5 gallons of water to 160, then steeped:
1 lb Crystal 20 L
0.5 lb Biscuit
Handful of Flaked Wheat (for head retention)
until boiling.

Off the heat, added 3 lbs Extra Light DME. Brought back to boil and begin hop pellet additions:
1 oz Chinook for 60 min
1 oz Centennial for 25 min
1.5 ox Centennial for 10 min
2 oz Cascade for 5 min

At flame out, added 3.33 lbs Light Extract Syrup (John Bull)

Chilled wort and pitched Safale US-56 dry yeast.

OG: 1.052

Two dry hop additions - 1 oz Cascade pellets each.
Check out how our patrons really dig the KPA I - just think what kind of reaction they will have to KPA II!! And this was an unsolicited act of joy and satisfaction.

About the "handful of flakes", yeah, I think that I may have added closer to two handfuls. I like retaining head.
This is a PG posting, by the way.

Also, just making a note that we decided to rack it into a secondary right away and dry hop one round. Tertiary on the way as well. Hopefully, enough yeast will catch a ride through the 'cane to keep fermenting.
I can smell the gasoline already.

We actually never landed this beer in a tertiary. It was racked at day 7 after bubbling had calmed down a lot. Ran the beer through a filter to get the nasty out and it's been in the secondary for 10 days now. Glad we're bottling tonight - can't wait to taste the fuel.

Are you sure? I thought we took if off of the dead yeast right away and then you racked it into a tertiary at 7 days. then again, you did all of the racking so I have no idea.

mmmm...I think this is going to be like a super, not supreme, gasoline.

Bottling only took about 3 hours last night (3/28). Let's just say that Thunder and Boomer got distracted by some sex ed literature. KPA II may have just been dubbed, "Spaceship". Actually, it is on the cap of every bottle, so I guess we are going with it. But there is good reason. A tribute to Biel Wunde and to the enigmatic female anatomy, which we learned quite a bit about last night.
